oatmeal cookies

These oatmeal cookies are super healthy. They contain oatmeal, obviously, and also flaxseed. Not very much sugar or margarine. Vegan. Actually, you’re better off not thinking of them as cookies lest they disappoint. Imagine them as “breakfast bars” or something like that!

Here are the ingredients, which we didn’t measure at all:

oatmeal flakes

flaxseeds

water

margarine

brown sugar

…at the end we decided to thrown in some cola cao (like nesquick) and little pieces of dark chocolate and a tiny bit of salt

then we topped them with flaxseeds, rainbow sprinkles, brown sugar, and coconut flakes

The dough doesn’t expand or rise much, so you can make fun shapes and they won’t be deformed by the baking process. Enjoy your flax!
